For the cake layer:

1 cup and 1/2 all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup buttermilk or sour milk

1 teaspoon vanilla extract

1/3 cup vegetable oil

2 large eggs

2 Tablespoons fresh lemon zest

2 Tablespoons fresh lemon juice

For the cream cheese layer:

1 8 oz . brick of cream cheese softened to room temperature

1 large egg

1/3 cup granulated sugar

1/2 teaspoon vanilla extract

1 Tablespoon lemon zest

For the crumb topping:

1/4 cup unsalted butter melted, cooled to room temperature

1/3 cup granulated sugar

1/4 teaspoon salt

2/3 cup all-purpose flour
