½ cup onion, peeled and chopped

2 cups cheddar cheese (grated), plus more for sprinkling on the top

1 package (2 pounds) frozen hash brown potatoes, thawed

½ cup butter, melted

1 (10¼ ounce) can cream of chicken soup

1 teaspoon salt

¼ teaspoon pepper

optional – green onions, sliced (green parts only)
